Starbucks Style Carrot Cake

Ingredients:

  • 2 cups Flour
  • 1 pck Baking Powder
  • 1 tsp Salt
  • 2 tsp Cinnamon
  • 1½ cup of Vegetable Oil
  • 1 cup of Sugar
  • 1 cup Brown Sugar
  • 1 pck of Vanilla Sugar
  • 4 Eggs
  • 2-3 Carrots (300 gr)
  • 1 cup chopped Walnuts (pecan)

For the Frosting:

  • 200 ml Cream
  • 200 gr Cream Cheese
  • 3 tbsp of Sugar

 

  • For the carrot walnut cake, first wash and grate the carrots. Chop the walnuts with a knife.
  • In a deep bowl, mix the dry ingredients with a whisk. Mix the flour, baking powder, salt and cinnamon and set aside.
  • Add oil, granulated sugar, brown sugar to another bowl and whisk untill smooth. Add the eggs one at a time, whisk each egg into the bowl seperately. 
  • Add the dry ingredients in 2 times and stir gently untill the dry ingredients dissappear. Then add carrots and walnuts and mix well. Bake in a preheated oven at 170 degrees Celsius for about 40 minutes.
  • For the cream, whisk the cream and granulated sugar with a mixer. Then add the cream cheese and whisk again. Your frosting is ready, you can spread it on your cake and serve it either by slicing or as a whole cake.
