Ingredients:
- 2 cups Flour
- 1 pck Baking Powder
- 1 tsp Salt
- 2 tsp Cinnamon
- 1½ cup of Vegetable Oil
- 1 cup of Sugar
- 1 cup Brown Sugar
- 1 pck of Vanilla Sugar
- 4 Eggs
- 2-3 Carrots (300 gr)
- 1 cup chopped Walnuts (pecan)
For the Frosting:
- 200 ml Cream
- 200 gr Cream Cheese
- 3 tbsp of Sugar
- For the carrot walnut cake, first wash and grate the carrots. Chop the walnuts with a knife.
- In a deep bowl, mix the dry ingredients with a whisk. Mix the flour, baking powder, salt and cinnamon and set aside.
- Add oil, granulated sugar, brown sugar to another bowl and whisk untill smooth. Add the eggs one at a time, whisk each egg into the bowl seperately.
- Add the dry ingredients in 2 times and stir gently untill the dry ingredients dissappear. Then add carrots and walnuts and mix well. Bake in a preheated oven at 170 degrees Celsius for about 40 minutes.
- For the cream, whisk the cream and granulated sugar with a mixer. Then add the cream cheese and whisk again. Your frosting is ready, you can spread it on your cake and serve it either by slicing or as a whole cake.
